Apple Pie for Breakfast

This morning we woke up to the mouthwatering aroma of warm apples and cinnamon. Our whole house smelled incredible! This Apple Pie Oatmeal recipe tastes even better than it smells. It's heavenly!

In a previous post, I talked about how we start a big portion of our morning routine the night before. Apple Pie Oatmeal fits perfectly into our routine. I love throwing the ingredients in the crockpot before bed to help our morning run a little more smoothly. When we wake up,  we have a warm, healthy breakfast ready to go. Steel cut oats is one of our favorite breakfast foods, I love it because my kids have no idea that they are eating a healthy breakfast.  Shhh. Don't tell them! This Apple Pie Oatmeal recipe is our favorite way to make them, not to mention one of the easiest!


You'll need:

1 1/4 c. steel cut oats
2 cups apple juice
2 cups water
1/3 c. brown sugar or honey
1 packet instant spiced cider
3 apples; cored, peeled, and diced
1 1/2 tea. cinnamon

Place the steel cut oats in your crockpot (I use my small crockpot and a crock pot liner. Using a large one may cause the oats to burn and stick to the edges. If you don't have a small crock pot, I recommend doubling the recipe. (Don't worry, it stores well for about a week, or you can totally freeze it until you're ready to eat it.) Add water and spiced cider. stir. Top with apples and cinnamon. Cook on LOW for 5-6 hrs (or high for 1 hr and warm until you wake up if you're lucky enough to sleep more than 6 hours.) When you wake, it is hot and ready for you. We top with vanilla soy milk and a sprinkle cinnamon.  SO delish!
