Healthy-ish White Chocolate Cranberry Zucchini Muffins

It's important to start your day off with a healthy, balanced breakfast. Trying to find a healthy breakfast can be kind of boring sometimes. These healthy-ish zucchini muffins break the mold. They're moist and delicious,  a wonderful blend of spice and zucchini, with just a touch of cranberries for a kick of tart and white chocolate for balanced the sweetness, making them perfectly flavored fall muffin.

Sometimes mornings can be crazy (even when we try to make our mornings less bumpy) and my kids wind up grabbing a banana and breakfast bar on their way to the bus stop. Its good, especially on those mornings, to have some quick easy breakfasts stored away in the freezer, just in case. I love knowing these muffins are packed with veggies, fruit, and oatmeal, which will keep them going all morning long.

You will need:
 1 box Spice Cake mix
1 1/2 cups grated zucchini
1/4 cup unsweetened applesauce
1/2 cup instant oatmeal
1/2 cup dried cranberries
1/4 cup white chocolate chips

1/2 cup all-purpose flour
1/4cup sugar
1/4 cup dark brown sugar
1 1/2 teaspoon cinnamon
1/4 cup instant oatmeal
1/2 teaspoon cardamom

Preheat oven to350. Mix all ingredients together until well incorporated.  Drop in paper-lined muffin cups. sprinkle topping over muffins. Bake 18-20 minutes, allow to cool completely before serving. This recipe makes 24 muffins that freeze very well.
