Pumpkin Spice Wonderful Waffles

Yes, it's true... I am a little obsessed with pumpkin spice everything. I am so excited it is FINALLY Fall, although here in Atlanta, it is still pretty warm and I am starting to wonder if that will change any time soon. This Utah girl isn't quite what to do with herself except to lower the temperature in my house, bake all the pumpkin spice things, and pretend it's fall.

This morning we woke up uncharacteristically early. So, while the kids got up and ready for school, I whipped up a batch of these amazingly wonderful pumpkin spice waffles. I love the rich, pumpkin spice flavor with sweet maple syrup. It was a very delicious way to start our morning. This recipe makes so many that we had leftover for the kids to snack on after school, which they absolutely loved. 

4 Tbsp. vegetable oil
2 1/2 c. all-purpose flour
1/4 c. light brown sugar, packed
2 tsp. baking powder
4 tsp. pumpkin pie spice
1/2 tsp. baking soda
1/2 tsp. salt
2 1/2 c. buttermilk 
4 large eggs, beaten
1 c. canned pumpkin puree

It's really super easy. Just toss the ingredients in a mixing bowl, whisk whisk whisk and then cook in a heated waffle iron. Your house will smell incredible and you will love love love the flavor.
