Simple {Major Allergen-Free} Rice Krispie Treats Recipe

When our second son was a baby, he was diagnosed with several severe food allergies. It was seriously one of the scariest experiences we have ever been through, sitting in the hospital day after day as a team of doctors tried to figure out what was going on with our baby. He was so, so sick. Thankfully, it was ONLY food allergies and something we are able to manage and are prepared to deal with if the need arises.  

Since then, we have had to modify and adjust recipes to fit his dietary needs. This Rice Krispie recipe is one that is modified to be allergy-free and you would never know. They look, taste, and stretch like and buttery Rice Krispie Treat would, but are dairy, egg, gluten, peanut and tree nut free! 

These are his favorite treat, hands down. They are so simple to make! In fact, he makes them all by himself sometimes.

 To make these delicious allergy-free treats you will need:
6 cups gluten-free Rice Krispies 
1 package Gluten-Free Marshmallows 
4 tablespoons ***Coconut Oil
1 teaspoon vanilla

Microwave coconut oil and marshmallows, stirring every 30 seconds until smooth. Add vanilla and cereal. Sir until well mixed and then press into a non-stick cooking spray coated 9x13 baking dish. Allow the cereal treats to cool before cutting and eating.

***Coconut is not a botanical nut; it is classified as a fruit, even though the Food and Drug Administration recognizes coconut as a tree nut. While allergic reactions to coconut have been documented, most people who are allergic to tree nuts can safely eat coconut. However, if you or your child are allergic to coconut, substitute with an allergy safe oil! If allergic reaction occurs, seek medical attention right away.***
